Oh yes. This one is just a collection of some of my favorite things in life. Pears, pie crust, blue cheese, bacon, roasted fennel, and cinnamon.
Pie crust, baked into a tart shell with open bottom, cooled
- 3 Pears (bartlett or asian) not too ripe
- 1 T Butter
- 1/4 t Cinnamon/sugar mix
- 5 strips cooked bacon or crispy prosciutto
- Blue cheese - or any type of soft cheese to spread on the bottom or crumble on top of
- Roasted kale (roasted with Maldon and olive oil)
- Fresh sage
Saute the butter and sage until a little crispy, then add the pears, sage, and cinnamon and sugar and cook for one minute. Pour into cooled pie shell, add bacon and fennel. This is particularly delicious with arugula tossed with olive oil and lemon on top.
